This is a favorite dinner around here.
1 egg, beaten
2 tbsp spread/tapenade type stuff (Roscoe likes Trader Joe's roasted red pepper spread)
2 tbsp shredded parmesan
salt and pepper to taste
Stir all the ingredients together until they're well mixed. Microwave for 30 seconds, take out and stir, and repeat until the egg is cooked - this usually takes between 1 and 2 minutes total cooking time. It's very hot when it's done; I put the bowl in the freezer for a minute afterwards to cool it down.
