Baked Tofu

1 lb. block of tofu
1/2 to 3/4 cup of your favorite marinade (we like Ken's Sesame Ginger)

Tofu takes on a "meatier" texture and absorbs marinade better after it's been frozen and thawed and had the water squeezed out, so that's what we do with ours before we marinate it. Cut it into 1" cubes, stir in the marinade to coat it, and let it sit in the refrigerator for a few hours. After it's marinated, preheat the oven to 350, spread the tofu cubes out in a single layer on a cookie sheet, and bake for 20 minutes.

Curry Tofu Salad

1 lb. block of tofu
1/2 c. mayonnaise
2 tsp curry powder

Squeeze the water out of the tofu and cut it into 1" cubes. In a small bowl, stir the mayonnaise and curry powder together, then combine that with the tofu. Voila! I give Roscoe the plain version and add grapes and walnuts to mine.
